1 cup | 62g / 2.2oz | Whole wheat flour |
2 | Baking powder | |
1/2 | Salt | |
1 3/4 cups | 70g / 2.5oz | Kashi® Good Friends cereal |
3/4 cup | 177ml | Skim milk - rice or soy milk |
1/4 cup | 59ml | Honey |
2 | Egg whites | |
1/4 cup | 59ml | Unsweetened apple sauce |
1 cup | 237ml | Ripe banana - mashed (medium) |

Preheat oven to 400°F
In a small bowl, stir together flour, baking powder and salt. Set aside. In a
large mixing bowl, combine Kashi Good Friends cereal and milk and let stand
for 2-3 minutes. Add the egg whites and beat well. Stir in apple sauce,
banana and honey. Add flour mixture and mix only until dry ingredients are
moistened (over-mixing will produce rubbery muffins).
Fill sprayed muffin tins. Bake for 20-25 minutes or until lightly browned.
