Kashi Friendly Fiber Muffins (1 PT)

Recipe Ingredients

1 cup 62g / 2.2ozWhole wheat flour
2   Baking powder
1/2   Salt
1 3/4 cups 70g / 2.5ozKashi® Good Friends cereal
3/4 cup 177mlSkim milk - rice or soy milk
1/4 cup 59mlHoney
2   Egg whites
1/4 cup 59mlUnsweetened apple sauce
1 cup 237mlRipe banana - mashed (medium)
  Non-stick cooking spray

Recipe Instructions

Preheat oven to 400°F

In a small bowl, stir together flour, baking powder and salt. Set aside. In a

large mixing bowl, combine Kashi Good Friends cereal and milk and let stand

for 2-3 minutes. Add the egg whites and beat well. Stir in apple sauce,

banana and honey. Add flour mixture and mix only until dry ingredients are

moistened (over-mixing will produce rubbery muffins).

Fill sprayed muffin tins. Bake for 20-25 minutes or until lightly browned.
