Marinated Artichoke Salad Recipe - Cooking Index
2 | Artichoke hearts - drained | |
1/2 cup | 118ml | Vinegar |
1 cup | 237ml | Vegetable oil |
2 tablespoons | 30ml | Sugar |
1 1/2 teaspoons | 7.5ml | Salt |
1/2 teaspoon | 2.5ml | Pepper |
1 1/2 teaspoons | 7.5ml | Dill weed, or more to taste |
2 teaspoons | 10ml | White onions - sliced (medium) |
Drain artichoke hearts. In a large bowl mix vinegar, oil, sugar, salt, pepper, and dill weed.
Add artichoke hearts and sliced onions: marinate overnight. Just before serving, add chopped pimento.
Serve on a lettuce leaf.
