1 cup | 237ml | Red or yellow pepper - cut into small cubes (large) |
1 tablespoon | 15ml | Fresh mint - snipped |
1/4 teaspoon | 1.3ml | Salt or fresh squeezed lemon |
Leaf lettuce | ||
1 | Mandarin oranges |
Mix olive oil and a little juice from the canned mandarins.
Pour over finished salads and serve.
