Ornish Couscous Salad

Recipe Ingredients

2 1/2 cups 592mlCooked couscous
2 cups 125g / 4.4ozFresh tomato - diced
3/4 cup 109g / 3.8ozFresh mint - chopped
1/2 cup 31g / 1.1ozOnion - minced
1/2 cup 73g / 2.6ozCucumber - diced
1/2 cup 73g / 2.6ozFresh parsley - chopped
4 tablespoons 60mlLemon juice
10   Garlic - minced
1/2 teaspoon 2.5mlGround cumin
1/2 teaspoon 2.5mlGround coriander
  Black pepper - freshly ground
  Salt

Recipe Instructions

Prepare the couscous according to package directions.

In a large bowl, combine the couscous, tomato, mint, onion, cucumber, parsley, lemon juice, garlic, cumin, and coriander.

Season to taste with pepper and salt.
