Recipe Ingredients

2 cups 474mlCooked am quinoa
1 cup 146g / 5.1ozParsley - chopped
1/2 cup 31g / 1.1ozChopped green onion
1   Garlic clove - pressed
1/2 teaspoon 2.5mlBasil
1/2 cup 118mlLemon juice
1/4 cup 59mlAm unrefined olive oil
1/8 teaspoon 0.6mlSea salt - (optional)
1/8 teaspoon 0.6mlPepper - (optional)
1   Lettuce leaves

Recipe Instructions

Mix first 9 ingredients and place in a salad bowl lined with washed lettuce leaves.

Refrigerate for at least two hours to let flavor blend.

Fresh mint and black olives make nice garnishes for this dish.
