Snow Pea and Berry Salad Recipe - Cooking Index
1 lb | 454g / 16oz | Snow peas |
1/2 | Raspberries | |
2 tablespoons | 30ml | Raspberry vinegar |
2 tablespoons | 30ml | Olive oil |
1 | Sugar | |
Salt and pepper | ||
1/2 | Blueberries |
Steam snow peas until bright green. Rinse under cold water immediately.
Press 1 tbs of raspberries thru a sieve. Add vinegar, then oil, sugar and salt and pepper.
Pour dressing over snow peas and blueberries in a bowl and toss gently to coat.
Add remaining raspberries and toss again. Refrigerate at least 1/2 hr. before serving.
