Special Chef's Salad

Recipe Ingredients

2 cups 474mlLettuce - bite sized pieces
2 cups 474mlSpinach - bite sized pieces
1/2 cup 73g / 2.6ozGreen pepper - chopped
1/2 cup 55g / 1.9ozCarrots - peeled, shredded
1/2 cup 118mlCucumber - halved, sliced
1/2 lb 227g / 8ozCooked ham - cut into 1/2" strips
1   Cream cheese - cubed
2   Eggs, hard cooked - chopped (large)
1   Onion - sliced (small)
  Oil and Vinegar Dressing
1/2 cup 118mlVegetable oil
1/4 cup 59mlVinegar
1 tablespoon 15mlKetchup
3/4 teaspoon 3.8mlSugar
1/4 teaspoon 1.3mlSalt
1/2 teaspoon 2.5mlGarlic salt
1/8 teaspoon 0.6mlPepper

Recipe Instructions

Combine the lettuce, spinach, green pepper, carrots, cucumber, ham, cream cheese, eggs and onion in a large bowl; cover and refrigerate. Prepare the Oil And Vinegar Dressing; cover and refrigerate.

OIL AND VINEGAR DRESSING:

Combine all of the ingredients in a glass jar, cover and shake well.

Makes 3/4 Cup.

TO SERVE:

Pour the dressing over the vegetables, toss gently to coat and serve.
