Walla Walla Onion Potato Salad

Recipe Ingredients

3 lbs 1362g / 48ozRed new potatoes - skinned
1 lb 454g / 16ozWalla Walla - Vidalia or other (large) mild onion
1 cup 110g / 3.9ozCelery - sliced
1 cup 146g / 5.1ozGolden delicious apple - diced (large)
20 cups 4740mlPimiento stuffed olives - sliced (large)
1/3 cup 78mlSweet pickle relish
1 1/2 cups 355mlMayonnaise
2 teaspoons 10mlDijon mustard
2 tablespoons 30mlWhite wine vinegar
2 tablespoons 30mlSteak sauce
  Salt and pepper - to taste

Recipe Instructions

Boil potatoes until just tender when pierced by a fork.

Drain, let cool and dice into a large bowl. Cut onions into quarters and slice thin; add to potatoes along with celery, apples, olives and pickle.

In a small bowl, stir mayonnaise, mustard, vinegar and steak sauce.

Spoon over potato mixture and mix gently. Season with salt and pepper.

Cover and refrigerate for at least 2 hours or until the next day.
