Salsa Fresca Con Chipotle Recipe - Cooking Index
1/2 | Red onion - diced | |
3 cups | 187g / 6.6oz | Fresh tomatoes - diced |
2 tablespoons | 30ml | Chopped cilantro |
4 | Chipotle peppers | |
Hydrated and minced | ||
1 teaspoon | 5ml | Salt |
1 teaspoon | 5ml | Sugar |
One lime - juice of |
Remove seeds and stems from chipotles. Hydrate the dried chipotles by placing them in enough water to cover.
Bring them to a boil, turn off the heat and let them sit until they cool.
After mincing them finely, add all the ingredients together. Let the salsa sit for at least a half-hour before serving.
