Black Bean and Rice Salad - 1

Recipe Ingredients

2 cups 320g / 11ozCooked rice - cooled to room temperature
1 cup 160g / 5.6ozCooked black beans
1 cup 62g / 2.2ozChopped fresh tomato
2 oz 56gCheddar cheese - (optional), - shredded
1 tablespoon 15mlSnipped fresh parsley
1/4 cup 59mlLight Italian dressing
1 tablespoon 15mlFresh lime juice
  Lettuce leaves

Recipe Instructions

Combine rice, beans, tomato, cheese (if desired), and parsley in large bowl. Pour dressing and lime juice over rice mixture; toss. Serve on lettuce leaves.
