Baked Bean Creole Recipe - Cooking Index
| 1 cup | Onion - chopped (large) | |
| 1 | Garlic clove - crushed | |
| Oil for frying | ||
| 2 | Green bell peppers - diced | |
| 3 | Celery stalks - sliced | |
| 2 tablespoons | Flour | |
| 1 x | Tomatoes | |
| 1 x | Tomato paste | |
| 1 | Basil | |
| 1 | Rosemary | |
| 2 cups | Cooked beans of your choice | |
| 1/2 cup | Breadcrumbs | |
| Water |
Saute onions & garlic lightly in oil. Add pepper & celery. Fry for several minutes until tender. Stir in the flour & add tomatoes. Add tomato paste & herbs & beans.
Mix in breadcrumbs. Add a little water if too dry. Spoon into oiled casserole & sprinkle breadcrumbs on top.
Bake for 30 minutes at 350F.
Serve with rice & salsa sauce.
