Quick Cajun Chicken Over Rice Recipe - Cooking Index
2 cups | 125g / 4.4oz | Onion - peeled, chopped (medium) |
1 tablespoon | 15ml | Olive oil |
3 | Garlic shoots removed and minced | |
2 | Chicken breasts skinned boned fat removed cut into bite size pieces | |
1 1/2 teaspoons | 7.5ml | Cajun seasoning or to taste - up to 1 |
2 | Diced ripe tomatoes | |
3/4 cup | 177ml | Dry sherry |
8 cups | 1280g / 45oz | Cooked brown rice |
In a heavy saucepan, saute onions in olive oil until transparent.
Add garlic and saute 5 minutes. Add chicken and Cajun seasoning.
Cook over medium high heat until chicken is opaque, stirring constantly.
Add tomatoes and sherry and simmer, covered, for 20 minutes.
Serve over rice, accompanied by steamed fresh broccoli florets.
