Seafood Rice Salad New Orleans

Recipe Ingredients

1   Frozen cooked shrimp - (8oz)
1   Tuna - drained(6oz)
3 cups 480g / 16ozCooked rice - cooled
1/2 cup 31g / 1.1ozMinced onions
1/2 cup 46g / 1.6ozMinced sweet pickles
1 1/2 cups 165g / 5.8ozThinly sliced celery
1/4 cup 36g / 1.3ozDiced pimiento
3   Hard-cooked eggs - chopped
1 tablespoon 15mlLemon juice
1 cup 237mlMayonnaise
  Crisp salad greens
  Tomato wedges - (optional)

Recipe Instructions

1. Combine all ingredients except greens and tomato wedges; season to taste and chill.

2. Serve on salad greens; garnish with tomato wedges if desired.
