Southeastern Shrimp Creole

Recipe Ingredients

1/4 cup  Margarine or butter
1 cup  Onion - chopped (medium)
1 cup  Green pepper - chopped (large)
1   Garlic clove - minced
1 x  Diced pimientos - (4 oz)
1/8 teaspoon  Salt
1/8 teaspoon  Pepper
1 x  Ro*tel diced tomatoes and green chilies - (10 oz)
1 lb  Shrimp - shelled and deveined
  Cooked rice

Recipe Instructions

In a large skillet, melt margarine; saute onion, pepper and garlic until tender.

Stir in pimientos, salt, pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done, about 5 minutes, stirring occasionally.

Serve with cooked rice.
