Southeastern Shrimp Creole

Recipe Ingredients

1/4 cup 49g / 1.7ozMargarine or butter
1 cup 62g / 2.2ozOnion - chopped (medium)
1 cup 146g / 5.1ozGreen pepper - chopped (large)
1   Garlic clove - minced
1   Diced pimientos - (4 oz)
1/8 teaspoon 0.6mlSalt
1/8 teaspoon 0.6mlPepper
1   Ro*tel diced tomatoes and green chilies - (10 oz)
1 lb 454g / 16ozShrimp - shelled and deveined
  Cooked rice

Recipe Instructions

In a large skillet, melt margarine; saute onion, pepper and garlic until tender.

Stir in pimientos, salt, pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done, about 5 minutes, stirring occasionally.

Serve with cooked rice.
