Southeastern Shrimp Creole Recipe - Cooking Index
| 1/4 cup | Margarine or butter | |
| 1 cup | Onion - chopped (medium) | |
| 1 cup | Green pepper - chopped (large) | |
| 1 | Garlic clove - minced | |
| 1 x | Diced pimientos - (4 oz) | |
| 1/8 teaspoon | Salt | |
| 1/8 teaspoon | Pepper | |
| 1 x | Ro*tel diced tomatoes and green chilies - (10 oz) | |
| 1 lb | Shrimp - shelled and deveined | |
| Cooked rice |
In a large skillet, melt margarine; saute onion, pepper and garlic until tender.
Stir in pimientos, salt, pepper and RO*TEL; simmer 10 minutes. Add shrimp and cook until done, about 5 minutes, stirring occasionally.
Serve with cooked rice.
