Eggless, Milkless Spice Cake

Recipe Ingredients

1 cup 237mlWater or beer
2 cups 320g / 11ozRaisins
1 cup 160g / 5.6ozPacked brown sugar
1/3 cup 65g / 2.3ozButter or shortening
1/2 teaspoon 2.5mlCinnamon and allspice
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlNutmeg
2 cups 125g / 4.4ozCake flour - sifted
1 teaspoon 5mlDouble action baking powder
1 teaspoon 5mlBaking soda
1 cup 93g / 3.3ozAlmonds - chopped - (optional)
  Caramel icing
  Added Ingredients To Turn
  Into A Fruitcake
1 cup 146g / 5.1ozDates - chopped
1 cup 146g / 5.1ozChopped figs
1 cup 146g / 5.1ozChopped citron

Recipe Instructions

Recipe from the Joy of Cooking Comment: the spice level is very subtle. For a spicier version, increase the amount of spice and/or add in some stronger ones such as ginger, anise, cloves.

Preheat oven to 325F.

Boil for 3 minutes the water (beer), raisins, brown sugar, butter, spices, and salt. Cool.

Sift together the cake four, baking powder and baking soda.

Stir the flour gradually into the other ingredients. Stir until smooth. Add almonds. [If making the fruitcake variation, add the remaining ingredients.] Bake in a greased tube pan for 1 hour or more. Frost with caramel icing.
