3 cups | 594g / 20oz | Sugar |
1/2 teaspoon | 2.5ml | Baking powder |
1/4 teaspoon | 1.3ml | Cloves |
1 teaspoon | 5ml | Vanilla |
6 teaspoons | 30ml | Eggs (large) |
3 cups | 187g / 6.6oz | Flour - unsifted |
1/2 teaspoon | 2.5ml | Salt |
1/2 teaspoon | 2.5ml | Allspice |
1/2 teaspoon | 2.5ml | Nutmeg |
1 cup | 237ml | Apple cider |
1/4 teaspoon | 1.3ml | Cinnamon |
Caramel Glaze | ||
1/2 cup | 99g / 3.5oz | Sugar |
1/4 teaspoon | 1.3ml | Soda |
1/4 cup | 49g / 1.7oz | Margarine |
1/4 cup | 59ml | Buttermilk |
1/2 tablespoon | 7.5ml | Corn syrup |
1/4 teaspoon | 1.3ml | Vanilla |
Soften margarine and shortening. Add sugar gradually, beating for 1- minutes.
Add egg one at a time, beating 1 1/2 minutes after each egg.
Sift together all the dry ingredients and add alternately with the cider and vanilla to the shortening mixture.
Blend well and bake in a 10" tube pan at 235F for 1 1/2 hours.
CARAMEL GLAZE: Bring ingredients to a rolling boil over low heat and boil for 10 minutes, stirring occasionally.
