Todd's Christmas Cake

Recipe Ingredients

1 cup 237mlDates
1 cup 62g / 2.2ozCherries
1 cup 237mlWalnuts
2/3 cup 73g / 2.6ozChocolate chips
1/4 teaspoon 1.3mlSalt
1 1/2 teaspoons 7.5mlBaking powder
1 cup 198g / 7ozSugar
1 1/2 cups 93g / 3.3ozFlour
3 cups 594g / 20ozEggs (large)

Recipe Instructions

Whips eggs well. Add flour, sugar, salt and baking powder to large bowl and mix well.

Mix in the goodies. Lick bowl! Place in 8x3x4 cake pan.

If you use pan, line it with wax paper. I use tin foil. It's much easier to wrap as a gift.

Bake at 325F for 1 1/2 hours.

Use a toothpick to see if done. You should not get anything but chocolate. There should be a good crust and be brown.

Make sure not too soft in the middle.
