Roomie's Low Fat Vegetarian Chili

Recipe Ingredients

1 teaspoon 5mlOlive oil
2 teaspoons 10mlOnions (medium)
2   Garlic - minced
56 oz 1591gCanned tomatoes or 3lb fresh
15 1/2 oz 440gRed kidney beans
15 oz 426gWhite kidney beans
15 oz 426gChickpeas
1 1/2 cups 165g / 5.8ozChopped celery
1   Green pepper - chopped
3 tablespoons 45mlLime or 2 T lemon juice
1 tablespoon 15mlChili powder
1 1/2 teaspoons 7.5mlOregano
1 1/2 teaspoons 7.5mlCumin
1/4 teaspoon 1.3mlCinnamon
12 oz 340gLight beer
  Dry roasted peanuts
  Cheddar cheese

Recipe Instructions

1. In a large pot, heat oil and saute onions and garlic until soft.

2. Add all ingredients except beer, peanuts and cheddar cheese. Cover and simmer 1 1/2 hours.

3. Add beer and simmer uncovered for 30 minutes.

4. Add handful of peanuts and sprinkle cheese on each serving.
