Venison Chili Recipe - Cooking Index
2 lbs | 908g / 32oz | Venison ground up |
Bacon drippings | ||
1 | Lemon - juice of | |
1 | Onion - chopped (large) | |
2 | Garlic - minced | |
Salt and pepper to taste | ||
1/2 cup | 31g / 1.1oz | Flour |
3 tablespoons | 45ml | Chili powder |
1 teaspoon | 5ml | Cumin, ground |
1/2 teaspoon | 2.5ml | Oregano |
1 | Tomato juice - (46 oz.) | |
2 | Kidney beans - (#2) | |
3 cups | 711ml | Water |
Sprinkle meat with lemon juice. Brown venison in bacon drippings; add onion, garlic, salt and pepper. Cook until well browned, then add flour and spices; mix well.
Add tomato juice, beans and water. Simmer about 2 hours, stirring occasionally.
