Venison Chili

Serves: 4 people

Recipe Ingredients

2 lbs 908g / 32ozVenison ground up
  Bacon drippings
1   Lemon - juice of
1   Onion - chopped (large)
2   Garlic - minced
  Salt and pepper to taste
1/2 cup 31g / 1.1ozFlour
3 tablespoons 45mlChili powder
1 teaspoon 5mlCumin, ground
1/2 teaspoon 2.5mlOregano
1   Tomato juice - (46 oz.)
2   Kidney beans - (#2)
3 cups 711mlWater

Recipe Instructions

Sprinkle meat with lemon juice. Brown venison in bacon drippings; add onion, garlic, salt and pepper. Cook until well browned, then add flour and spices; mix well.

Add tomato juice, beans and water. Simmer about 2 hours, stirring occasionally.
