3 | Thick turkey breast - about 1 1/2 lb | |
3/4 cup | 46g / 1.6oz | Diced - seeded tomato |
1/2 cup | 73g / 2.6oz | Peeled - diced orange |
1 | Diced green chiles | |
1/2 cup | 31g / 1.1oz | Thinly sliced green onions |
3 tablespoons | 45ml | Chopped fresh cilantro |
2 | Pared - minced, up to 3 |
1/4 teaspoon salt 1 to 2 - tbsp butter or -- margarine
Cilantro sprigs Cut each turkey slice into 2 pieces, cover and set aside. Combine tomato, orange, chiles, onions, cilantro, gingerroot and salt in medium bowl, set aside. Melt butter in large skillet over medium- high heat. Saute turkey steaks, half at a time, if necessary, until lightly browned on both sides, about 3 to 5 minutes. Transfer to serving platter, spoon salsa on top. Garnish with cilantro sprigs. Makes 6 servings.
