Shrimp with Tomatoes and Garlic (4 PTS)

Serves: 4 people

Recipe Ingredients

2 tablespoons 30mlOlive oil
3   Garlic - minced
1/2 cup 118mlDry white wine
1/2 cup 31g / 1.1ozCanned tomatoes, drained - seeded and chopped
20   X-large shrimp - shelled and deveined
1/4 cup 59mlTorn fresh basil
  Salt and pepper to taste

Recipe Instructions

Combine oil and garlic in large deep nonreactive skillet or saute pan.

cook

over low heat 2 minutes or until garlic begins to sizzle. Do not brown.

Add

wine. Increase heat to high and boil 3 minutes or until reduced by half.

Add tomatoes, shrimp and half the basil. Cook, stirrng, 3 minutes or

until

shrimp are opaque through to center. Season with sal and pepper. Garnish

with remaining basil.
