Tuna Lemon Caper Sauce Over Penne (10.5 PTS)

Recipe Ingredients

6 oz 170gTuna in water, canned - drained
1 oz 28gGarlic clove - finely chopped (large)
  Lemon zest - of 1 medium lemon,
  Grated
2   Fresh lemon juice
1/4 cup 59mlOlive oil
1/2   Salt - or to taste
  Freshly ground black pepper - to taste
2   Capers - drained
1/4 cup 36g / 1.3ozParsley - Flat-style, chopped
8   Penne pasta - or rigatoni or
  Medium shells
4 teaspoons 20mlParmesan cheese - freshly grated

Recipe Instructions

Combine all ingredients except parmesan cheese in a bowl and mix, set

aside.

Cook pasta al dente. Toss pasta and tuna sauce together, sprinkle 1 tsp

parmesan over each serving.
