Chicken Monterey With Black Beans

Recipe Ingredients

  Chicken
2 tablespoons 30mlOlive or vegetable oil
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlDried oregano
1/2 teaspoon 2.5mlCoarsely ground pepper
1/4 teaspoon 1.3mlGround cumin
1   Frying chicken - cut in 8 pieces
  Black Beans
1   Black beans - (15 oz.)
1/2 cup 31g / 1.1ozSliced green onions
1 tablespoon 15mlChopped seeded jalapeno pepper
1 cup 146g / 5.1ozMonterey jack cheese - shredded

Recipe Instructions

Heat broiler. In small bowl stir together all chicken ingredients except chicken.

Place chicken pieces on broiler pan; brush with half of oil mixture. Broil 4-6 inches from heat, turning once and basting with remaining oil mixture, until chicken is fork tender (25-30 minutes.)

Meanwhile, place beans in 2 quart saucepan. Cook over medium heat, stirring occasionally, until heated through 5-7 minutes). Stir in green onion and jalapeno.

Serve beans over chicken; sprinkle with cheese.

NOTES : Serve with slices of avocado and tomato
