Cured Turkey Recipe - Cooking Index
| 1 1/3 cups | Kosher salt | |
| 1/2 cup | Sugar | |
| 2 tablespoons | Sugar | |
| 2 x | Bay leaves | |
| 1 tablespoon | Thyme | |
| 7 | Whole cloves | |
| 1/2 tablespoon | Allspice berries - crushed | |
| 1/2 teaspoon | Juniper berries - crushed | |
| 1 x | Turkey - 14 pound or more |
in a very large stockpot combine all ingredients and 2 gallons of water.
Bring to a rolling boil and remove from heat and cool to room temp. Add turkey breast side down and cover and refrigerate overnight.
