Cured Turkey

Recipe Ingredients

1 1/3 cups  Kosher salt
1/2 cup  Sugar
2 tablespoons  Sugar
2 x  Bay leaves
1 tablespoon  Thyme
7   Whole cloves
1/2 tablespoon  Allspice berries - crushed
1/2 teaspoon  Juniper berries - crushed
1 x  Turkey - 14 pound or more

Recipe Instructions

in a very large stockpot combine all ingredients and 2 gallons of water.

Bring to a rolling boil and remove from heat and cool to room temp. Add turkey breast side down and cover and refrigerate overnight.
