2 teaspoons | 10ml | Lemon juice |
1 teaspoon | 5ml | Low sodium soy sauce |
1/2 teaspoon | 2.5ml | Ground green or white peppercorns |

Wash hens and pat dry. Mix marinade ingredients. Brush hens inside and out, reserving the extra marinade for basting. Refrigerate hens for 2 hours. Preheat oven to 400 F. Place a sprig of parsley in the cavity of each hen. Place on roasting rack in shallow pan. Roast for 15 minutes at 400 F. Reduce heat to 350 F and roast for 1 hour. Baste with reserved marinade frequently (every 10 - 12 minutes).
