Artichoke Quiche From Lake Oswego

Recipe Ingredients

14 oz 397g One 10 inch unbaked
  Artichokes - canned, water
3   Packed
8 oz 227gEggs
1 cup 146g / 5.1ozNeufchatel cheese - softened
3/4 cup 109g / 3.8ozLow-fat cottage cheese
1 cup 237mlButtermilk
  White cheese, 2-in cubes
1 teaspoon 5ml(Muenster; Swiss or mozzarella)
1/4 teaspoon 1.3mlSalt
1/4 teaspoon 1.3mlThyme
1/4 teaspoon 1.3mlWhite pepper
6   Beau monde seasoning
  Lean bacon - cooked and crumbled

Recipe Instructions

Drain artichokes, cut in quarters. Beat eggs; add Neufchatel, cottage cheese and buttermilk. Add grated cheese. Stir in seasonings and crumbled bacon. Place artichokes in bottom of pie shell; pour cheese mixture over artichokes. Bake at 375F for 50 to 60 minutes or until toothpick comes out clean. Serves 4 to 6
