| Artichokes - canned, water | ||

| 8 oz | 227g | Eggs |
| 1 cup | 146g / 5.1oz | Neufchatel cheese - softened |
| 3/4 cup | 109g / 3.8oz | Low-fat cottage cheese |
| 1 cup | 237ml | Buttermilk |
| White cheese, 2-in cubes | ||
| 1 teaspoon | 5ml | (Muenster; Swiss or mozzarella) |
| 1/4 teaspoon | 1.3ml | Salt |
| 1/4 teaspoon | 1.3ml | Thyme |
| 1/4 teaspoon | 1.3ml | White pepper |
| 6 | Beau monde seasoning | |
| Lean bacon - cooked and crumbled |
Drain artichokes, cut in quarters. Beat eggs; add Neufchatel, cottage cheese and buttermilk. Add grated cheese. Stir in seasonings and crumbled bacon. Place artichokes in bottom of pie shell; pour cheese mixture over artichokes. Bake at 375F for 50 to 60 minutes or until toothpick comes out clean. Serves 4 to 6
