Khao Pad Prik Gung (Fried Rice With Prawn And Chilies)

Recipe Ingredients

2 tablespoons 30mlOil
2   Garlic cloves - finely chopped
2   Red chilies - finely chopped (small)
4 oz 113gPeeled prawns
1 tablespoon 15mlFish sauce
1/4 teaspoon 1.3mlSugar
1 tablespoon 15mlLight soy sauce
2 cups 320g / 11ozCooked rice
1/2 cup 31g / 1.1ozOnion - slivered (small)
1/2   Red or green sweet pepper - slivered
1/2 teaspoon 2.5mlGround white pepper
1   Spring onion, green part only - slivered into 1"
  Coriander leaves - to garnish

Recipe Instructions

In a work or frying pan, heat the oil until a light haze appears. Add the garlic and fry until golden brown. Add the chilies and the prawns and stir quickly. Add the fish sauce, sugar and soy sauce; stir and cook for a few seconds until the prawns are cooked through. Add the cooked rice and stir thoroughly. Add the onion, sweet pepper, white pepper and spring onion and stir quickly to mix. Turn onto a serving dish and garnish with the coriander leaves.
