Wild Rice With Spicy Pecans I

Recipe Ingredients

1 1/2 cups 355mlWater
2   Bay leaves
  Salt - to taste
  Freshly-ground black pepper - to taste
1 1/2 cups 240g / 8.5ozWild rice
3/4 cup 177mlPecan pieces
2/3 cup 61g / 2.2ozCranberries
2 tablespoons 30mlUnsalted butter
2 tablespoons 30mlMaple syrup - (to 3 tbspns)
1/2 teaspoon 2.5mlCayenne pepper - or to taste
1 teaspoon 5mlGround cumin
1/2 teaspoon 2.5mlSalt - or to taste

Recipe Instructions

Combine the water, bay leaves, salt and pepper to taste in a pot with a snug-fitting lid. Bring to a boil. Add the rice, reduce to a simmer, and cook 40 to 45 minutes.

Combine the remaining ingredients in a saute pan and saute over low heat until the nuts have toasted lightly. Remove from the heat and combine with the cooked wild rice.
