Warm Citrus Melange w Frozen Fruit Yogurt & Banana Galettes Recipe - Cooking Index
1 tablespoon | 15ml | Sweet butter |
1 tablespoon | 15ml | Papaya - peeled, seeded, (large) |
And cut 1/2" dice | ||
1 | Fresh pineapple - peeled, and | |
Cut 1/2" dice | ||
2 | Oranges - peel, pith removed, | |
And sections removed from membranes | ||
1 | Lemon - peel, pith removed, | |
And sections removed from membranes | ||
1 | Fresh berries, preferably black berries | |
1 tablespoon | 15ml | Sugar |
1/4 cup | 59ml | Orange juice |
1 | Banana Galettes - see * Note | |
1 | Fruit frozen yogurt, preferably banana or | |
Berry flavored | ||
Mint sprigs - for garnish |
* Note: Packaged dried thinly-sliced bananas available in Asian specialty stores.
In a saute pan melt butter over moderate heat and cook until golden brown. Add the papaya, pineapple, oranges, lemon, berries, sugar, and orange juice, stirring to combine, and cooking until liquid is reduced to a syrup. Transfer fruit to a bowl. Roll banana galettes into cones and secure with a toothpick or skewer. Scoop frozen yogurt into banana galettes and top with fruit. Garnish with mint. Serve immediately.
This recipe yields 4 to 6 servings.
