Mustard Sauce I Recipe - Cooking Index
1 tablespoon | 15ml | Sweet mustard |
1 teaspoon | 5ml | Dijon mustard |
2 teaspoons | 10ml | Sugar |
1 1/2 tablespoons | 22ml | Swedish vinegar |
(or distilled white vinegar) | ||
1 1/2 tablespoons | 22ml | Cold coffee |
1 | Salt | |
1 | Freshly-ground white peppercorns | |
3/4 cup | 177ml | Canola oil |
1/2 cup | 73g / 2.6oz | Chopped dill |
Combine the sweet and Dijon mustard, sugar, vinegar, coffee, salt and pepper in a food processor. Drizzle canola oil into the mixture in a very slow, steady stream, until a thick consistency is formed. A whisk may also be used. Refrigerate overnight.
