Broiled Swordfish Steaks Recipe - Cooking Index
|1 tablespoon||15ml||Cayenne pepper|
|1 1/2 teaspoons||7.5ml||Garlic powder|
|1 1/2 teaspoons||7.5ml||Onion powder|
|1 1/4 teaspoons||6.3ml||Fennel seed - ground|
|1 teaspoon||5ml||Anise seed - ground|
|1 teaspoon||5ml||Ground cinnamon|
|1 teaspoon||5ml||Ground cloves|
|1 teaspoon||5ml||Ground ginger|
|3/4 teaspoon||3.8ml||Black pepper|
|1/2 teaspoon||2.5ml||White pepper|
|4 tablespoons||60ml||Unsalted butter - melted|
Combine the seasoning mix ingredients in a small bowl. Place the broiler rack in the middle position and preheat the broiler.
Dip each steak in melted butter, coating both sides. Sprinkle one side of each steak with 3/4 teaspoon of the seasoning mix and place seasoned side down on a broiler-proof pan.
Season the other side of each steak with 3/4 teaspoon seasoning mix.
Broil until the tops are browned but not burned, about 4 minutes.
