3 tablespoons | 45ml | Shredded nonfat Monterey Jack cheese |
Spray a small nonstick skillet with nonstick cooking spray; heat. Add the eggs and tomato; cook, stirring constantly, until the eggs are scrambled, about 2 minutes.
Spoon the egg mixture evenly over the tortillas; top evenly with the salsa and cheese. Microwave the tortillas one at a time on Medium-High until heated through and the cheese is melted, about 1 minute.
