2   Red Delicious apples - cored and diced
1 tablespoon 15mlFresh lime juice
2 cups 125g / 4.4ozDiced cooked skinless chicken breast
2 cups 474mlSmall seedless grapes - halved
1/4 cup 36g / 1.3ozWalnuts - coarsely chopped
1/4 cup 59mlNonfat sour cream
2 teaspoons 10mlReduced-calorie mayonnaise
2 teaspoons 10mlDijon mustard
1/4 teaspoon 1.3mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
12   Loose-leaf lettuce leaves

Recipe Instructions

In a large bowl, combine the apples and lime juice; toss to coat. Add the chicken, grapes, walnuts, sour cream, mayonnaise, mustard, salt and pepper; toss to combine.

Place the lettuce leaves on plates; top with the salad mixture.
