Oven-Roasted Potatoes

Recipe Ingredients

4 teaspoons 20mlRed potatoes - scrubbed, quartered (small)
1   Onion - chopped
2 teaspoons 10mlUnsalted stick margarine
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlFreshly-ground black pepper
  Rosemary sprig - (optional)

Recipe Instructions

Preheat the oven to 350 degrees. Spray a 2-quart casserole with nonstick cooking spray.

Place the potatoes and onion in the casserole. Dot with the margarine and sprinkle with the salt and pepper; top with the rosemary (if using). Bake, covered, until the potatoes are tender, about 50 minutes.
