Alaska Sablefish And Vegetable Stir-Fry

Recipe Ingredients

1 lb  Sablefish fillets or steaks - thawed if necessary
  Salt - to taste
  Freshly-ground black pepper - to taste
1   Onion - halved, and (medium)
  Thinly sliced
3   Zucchini - cut 1/4" slices
2   Carrots - sliced thin
  Diagonally
1/4 teaspoon  Thyme - crushed
3 tablespoons  Oil
  Grated Parmesan cheese - (optional)

Recipe Instructions

Cut sablefish in 1 1/2-inch chunks; sprinkle with salt and pepper. Stir-fry sablefish, vegetables and thyme in hot oil 8 to 10 minutes or until sablefish flakes easily when tested with a fork and vegetables are crisp-tender. Serve with Parmesan cheese.

This recipe yields 4 or 5 servings. Recipe may be halved or doubled.

Serving tip: Stir-fry sablefish and vegetables may be served with hot green pasta.
