Nippy Carrot Bake

Recipe Ingredients

  Nonstick cooking spray
3 cups 330g / 11ozCarrots - cooked, mashed
3   Eggs - lightly beaten
2 cups 474mlMilk
1 1/4 cups 182g / 6.4ozPepper cheese - (4 ounces)
1 cup 146g / 5.1ozBread crumbs
2 tablespoons 30mlUnsalted butter - melted
  Salt to taste
1 teaspoon 5mlPrepared horseradish
1/4 cup 36g / 1.3ozChives - finely chopped

Recipe Instructions

1. Preheat oven to 350F. Coat a 9-inch by 9-inch baking pan with cooking spray. Set aside.

2. In large bowl, combine carrots, eggs, milk, cheese, bread crumbs, butter, salt, horseradish and chives. Transfer to pan. Bake about 30 minutes, or until knife inserted in center comes our clean.
