Sausage N' Sauerkraut

Recipe Ingredients

1 lb 454g / 16ozFresh polish sausage - or bratwurst, up to 2
1   Sauerkraut - rinsed and drained
1   Tomatoes with liquid - cut up
1 cup 110g / 3.9ozChopped celery
1 cup 62g / 2.2ozOnion - chopped (large)
1 cup 146g / 5.1ozGreen pepper - chopped (large)
3 tablespoons 45mlBrown sugar
1   Bay leaf
1 teaspoon 5mlDried oregano
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlPepper
  Mashed potatoes - optional

Recipe Instructions

Cut the sausage into 1" slices. Saute in a Dutch oven until fully cooked and browned. Drain. Add sauerkraut, tomatoes with liquid, celery, onion, green pepper, brown sugar and seasonings.

Mix well. Cover and simmer for 20-25 minutes. or until vegetables are tender. Remove bay leaf. Serve over mashed potatoes, if desired.
