Bruschetta Romana Piccante (Spicy Roman Bruschetta)

Recipe Ingredients

3/4 teaspoon 3.8mlRed wine vinegar
1/4 cup 59mlOlive oil
6 tablespoons 90mlParsley - chopped
3 tablespoons 45mlBasil - chopped
1/2 teaspoon 2.5mlGarlic - minced
1/8 teaspoon 0.6mlRed pepper flakes -=or=-
1   Red chili - minced
2 tablespoons 30mlFresh breadcrumbs - if needed
6   Italian country-style bread - cut 3/4" to 1" pcs
1 tablespoon 15mlOlive oil

Recipe Instructions

Whisk together the vinegar and oil.

Stir in the parsley and basil. Add the garlic and pepper flakes.

Leave for 2 hours to let the flavours meld.

If the mixture seems to thin, add the breadcrumbs.

Grill or toast the bread slices.

While they are still warm, brush with a little olive oil, spread with the bruschetta topping and serve.
