Apricot Couscous Recipe - Cooking Index
| 1 1/2 cups | -- water | |
| 2 oz | Apricots - dried, finely | |
| 1 teaspoon | Margarine - nondairy | |
| 1/3 teaspoon | Cardamom | |
| 1 cup | Couscous |
Combine water, apricots, margarine and cardamom in 1 quart casserole dish. Cover. Microwave on high for 4 minutes, or until water reaches full boil. Add couscous. Cover. let stand 5 minutes or until liquid is absorbed. Serves 5
