Marinated Barley Vegetable Salad Recipe - Cooking Index
1/2 cup | 118ml | Pearled barley |
1 cup | 237ml | Frozen peas - thawed |
4 oz | 113g | Cooked turkey - cubed |
1/4 cup | 36g / 1.3oz | Coarsely-chopped red bell pepper |
1/4 cup | 36g / 1.3oz | Coarsely-chopped yellow bell pepper |
2 | Green onions - sliced | |
2 tablespoons | 30ml | Olive oil |
1/2 teaspoon | 2.5ml | Finely-shredded lime peel |
2 tablespoons | 30ml | Lime juice |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Poultry seasoning |
1 | Ground red pepper |
Cook barley according to package directions; drain and rinse. In a large mixing bowl combine cooked barley, peas, turkey, sweet pepper, and onion.
For the dressing, in a screw-top jar combine oil, lime peel, lime juice, salt, poultry seasoning, and ground red pepper. Cover and shake to mix. Pour over barley mixture. Toss to coat. Cover and chill 4 hours or overnight.
