Almond Madeleines Recipe - Cooking Index
| 1/4 lb | Sweet butter | |
| 3 lbs | Eggs (large) | |
| 1/2 cup | Sugar | |
| 3/4 cup | Ground blanched almonds | |
| 1/2 teaspoon | Baking powder | |
| 3/4 teaspoon | Vanilla extract | |
| 1 1/2 teaspoons | Almond extract | |
| Confectioners sugar |
Melt butter in microwave, let cool. Combine eggs and sugar in mixing bowl; beat for 5 minutes. Add flour, almonds, baking powder; beat 3 to 5 minutes.
Add vanilla and almond extract; beat 1 minute.
Pour in cooled butter; stir thoroughly with mixing spoon.
Allow to stand for 30 minutes. Preheat oven to 325F.
Butter madeleine pans. Fill mixture 2/3 full.
Bake 20 to 25 minutes, until slightly brown on edges.
Turn out on rack to cool, ribbed side up.
Sift confectioners sugar on top. Makes about 3 dozen 3 inch madeleines.
