Melon Relish Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
2 tablespoons | 30ml | Minced shallots |
1/2 cup | 73g / 2.6oz | Small-diced honeydew melon |
1/2 cup | 73g / 2.6oz | Small-diced cantaloupe |
1/4 cup | 59ml | White wine |
2 teaspoons | 10ml | Chiffonade of mint |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a saute pan, heat the olive oil. When the oil is hot, saute the shallots for 1 minute. Add the melon and cantaloupe and saute for 1 minute. Add the white wine and continue sauteing for 2 minutes. Remove from the heat and season with salt and pepper. Stir in the mint. Chill for 1 hour.
This recipe yields about 1 cup of relish.
