Shrimp With Mozzarella Quesadilla Recipe - Cooking Index
Twelve cloves of Caramelized Garlic may seem like a lot, but they make this filling extra good.
Type: Fish, Shellfish1 lb | 454g / 16oz | Medium shrimp - peeled, deveined |
1 cup | 237ml | Shredded mozzarella |
12 | Caramelized Garlic - (see recipe) | |
2 tablespoons | 30ml | Grated Parmesan cheese |
1/4 cup | 36g / 1.3oz | Chopped red bell pepper |
1/4 cup | 59ml | Olive oil |
6 | Basil leaves - chipped | |
6 | Flour tortillas | |
Grilled Salsa - (see recipe) |
Thread the shrimp on skewer and grill for 4 to 5 minutes on each side. Remove the shrimp from the grill and, when they cool slightly, cut them into small pieces.
In a medium bowl, combine the shrimp with the remaining ingredients, except the tortillas, and mix well. Spread the mixture on the tortillas and grill at a medium heat until cooked through. Serve with Grilled Salsa.
This recipe yields 8 to 10 appetizer servings.
