Overnight Latkes Recipe - Cooking Index
2 1/2 lbs | 1135g / 40oz | Potatoes - grated |
1 lb | 454g / 16oz | Onions - grated |
6 | Eggs | |
1/3 cup | 78ml | Matzo meal |
1/4 cup | 49g / 1.7oz | Shortening |
1/2 tablespoon | 7.5ml | Salt |
1 teaspoon | 5ml | Freshly-ground black pepper |
4 cups | 948ml | Oil |
Peel and grate potatoes; combine with grated onion, beaten eggs, matzo meal, shortening, salt, and pepper. Refrigerate overnight.
Heat oil and fry by tablespoonful on both sides until browned. Drain.
This recipe yields 12 servings.
