3 lbs | 1362g / 48oz | Irish potatoes - peeled, diced, |
And boiled | ||
6 | Hard-boiled eggs - peeled, diced | |
1 cup | 62g / 2.2oz | Finely-chopped green onions |
1 1/2 cups | 355ml | Mayonnaise |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1/4 cup | 59ml | Yellow mustard |
Into a large bowl, place potatoes, eggs, green onions, salt and pepper and toss well. Add mayonnaise to desired consistency. Add mustard to taste. Refrigerate until ready to serve.
