6 teaspoons | 30ml | Carrots - cut 1/2" chunks (medium) |
1/2 cup | 73g / 2.6oz | Finely-chopped green pepper |
1/2 cup | 31g / 1.1oz | Finely-chopped onion |
3 | Chicken breasts - cut lengthwise | |
1/2 teaspoon | 2.5ml | Salt |
1 | Sweet and sour sauce - (10 oz) | |
1 | Pineapple chunks - (15 1/2 oz) - drained | |
3 tablespoons | 45ml | Cornstarch |
3 tablespoons | 45ml | Cold water |
Hot cooked rice |
In a crockery cooker, place carrots, green pepper and onion. Top with chicken breasts. Sprinkle with salt. Pour sweet-and-sour sauce and pineapple chunks over all. Cover. Cook on LOW 7 to 8 hours or HIGH 3 1/2 to 4 hours.
Remove chicken, keeping it warm. Blend cornstarch and water, stir into juices in crockpot. Cover; cook on HIGH 10 to 15 minutes or until thickened. Season to taste and serve over rice.
