1 | Frozen whole-kernel corn - (10 oz) - thawed | |

1 cup | 146g / 5.1oz | Diced red or orange bell pepper |
3 | Green onions with green tops - sliced | |
1/3 cup | 5.3g / 0.2oz | Chopped fresh cilantro |
2 tablespoons | 30ml | Fresh lime or lemon juice |
2 tablespoons | 30ml | Olive oil |
1/4 teaspoon | 1.3ml | Hot pepper sauce - (to 1/2) - as desired |
1/4 teaspoon | 1.3ml | Salt |
5 teaspoons | 25ml | Red leaf lettuce leaves (large) |
Combine the corn, bell pepper, onions, and cilantro in a medium bowl.
In another bowl, whisk together the lime juice, oil, pepper sauce, and salt; pour over the corn mixture. Toss well, cover, and chill at least 1 hour for flavors to blend.
Serve on lettuce leaves.
