Corn Relish Salad

Recipe Ingredients

1   Frozen whole-kernel corn - (10 oz) - thawed
  = (or 2 cups fresh corn kernels)
1 cup 146g / 5.1ozDiced red or orange bell pepper
3   Green onions with green tops - sliced
1/3 cup 5.3g / 0.2ozChopped fresh cilantro
2 tablespoons 30mlFresh lime or lemon juice
2 tablespoons 30mlOlive oil
1/4 teaspoon 1.3mlHot pepper sauce - (to 1/2) - as desired
1/4 teaspoon 1.3mlSalt
5 teaspoons 25mlRed leaf lettuce leaves (large)

Recipe Instructions

Combine the corn, bell pepper, onions, and cilantro in a medium bowl.

In another bowl, whisk together the lime juice, oil, pepper sauce, and salt; pour over the corn mixture. Toss well, cover, and chill at least 1 hour for flavors to blend.

Serve on lettuce leaves.

This recipe yields 5 servings. Serving size: 1/2 cup.
