Grilled Salmon Steaks With Tarragon Sauce

Recipe Ingredients

4   Fresh salmon steaks, 1" thick - (5 oz ea)
3 tablespoons 45mlFresh lemon juice
  Tarragon Sauce
2   Shallots - minced
2 tablespoons 30mlChopped fresh tarragon
  = (or 2 tspns crushed dried tarragon)
1 cup 237mlPlain nonfat yogurt
1 cup 62g / 2.2ozPlum tomato - (3 oz) - seeded, and (medium)
  Finely minced
1 tablespoon 15mlMinced flat-leaf parsley

Recipe Instructions

Start a grill or preheat broiler. Brush both sides of salmon with lemon juice. Grill for 5 to 6 minutes per side, turning once, until salmon flakes when prodded with the tines of a fork.

Meanwhile, in a bowl, combine shallots, tarragon, yogurt, tomato, and parsley. Mix well.

When salmon steaks are done, arrange on dinner plates and spoon some of the tarragon sauce alongside.

This recipe yields 4 servings.
