Apple And Celery Salad Recipe - Cooking Index
Wonderfully tart, crunchy and refreshing. A nice light touch with such a filling meal.Courses: Salads
|2||Granny Smith apples - cored, and thinly sliced|
|2||Celery ribs - thinly sliced on the diagonal|
|6||Radishes - thinly sliced|
|1/4||Red cabbage - shredded|
|3||Scallions - thinly sliced on the diagonal|
|1||Fresh cayenne pepper - thinly sliced, (optional)|
|Juice of 2 lemons|
|1/4 cup||59ml||Olive oil|
|1||Mint - stemmed, and roughly chopped|
|Salt - to taste|
|Freshly-ground black pepper - to taste|
Place everything in a large bowl and toss gently to combine. Serve at once.
