Recipe Ingredients

2   Rabbits - (abt 3 lbs ea) - skinned, cut up
4   Egg yolks - beaten
2 cups 292g / 10ozBread crumbs
1/8 teaspoon 0.6mlMace
1/8 teaspoon 0.6mlNutmeg
1/4 cup 49g / 1.7ozButter for frying
2 cups 474mlBrown gravy
1 cup 237mlRed wine
1/2 lb 227g / 8ozFresh mushrooms - sliced
2 tablespoons 30mlFlour - mixed well with
2 tablespoons 30mlButter

Recipe Instructions

Rub the rabbit pieces with the egg yolks and roll in bread crumbs to which you have added the mace and nutmeg. Fry in a Dutch oven until well browned.

Add the remaining ingredients and stir until thick. Cover and simmer until tender.
